Ingredients:
- 10 eggs
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1/2 cup ground sausage
- 8 flour tortillas
- 1/2 yellow onion, diced
- 1/2 cup cheddar cheese, shredded
Directions
- Begin by mixing the eggs in a bowl. Heat oil over medium-low heat in a large frying pan. Add the eggs and season with salt and pepper. Stir occasionally until eggs are scrambled and cooked thoroughly.
- In a separate frying pan sauté ground sausage over medium heat until cooked thoroughly, stirring occasionally.
- Lay out tortillas. Add eggs, sausage, and onions to each tortilla. Top with cheddar cheese.
- Roll each burrito and wrap in aluminum foil or parchment paper. Store in freezer for up to one month.
Preparing
- Unwrap frozen burrito and place in microwave.
- Microwave on high for two to three minutes, flipping halfway through. Let burrito sit for one minute before enjoying.
