Chicken Ingredients
- 1 boneless, skinless chicken breast

Burrito Bowl Ingredients
- 2 cups brown rice, prepared
- 2 cups romaine lettuce, chopped
- 1 cup canned black beans, drained
- 1 cup canned corn, drained
- 1 avocado, sliced
- 1/3 cup cheddar cheese, shredded
- 1/3 cup plain Greek yogurt
- 1/4 cup salsa
Chicken Directions
- Use a sharp knife to cut the chicken breast in half, lengthwise.
- Season chicken breast with salt, black pepper, paprika, and garlic powder.
- Heat the olive oil in a small frying pan on medium heat. When the pan is hot, place the chicken into the pan.
- Cook for three minutes on each side or until the chicken is cooked thoroughly and reaches an internal temperature of 165 degrees Fahrenheit.
- Remove the chicken and let rest for two minutes before slicing.
Burrito Bowl Directions
- In a medium bowl, layer rice, romaine lettuce, black beans, corn, and avocado. Sprinkle on cheddar cheese, then drizzle Greek yogurt and salsa. Place prepared chicken over the top.
- Enjoy immediately or place in the refrigerator for up to two days.
