Salad Ingredients
- Head of Romaine lettuce, chopped
- 8 ounces cooked chicken, sliced
- 2 cups tomatoes, chopped
- 1 cup cucumber, chopped
- 1/4 cup Kalamata olives, halved
- 1/4 cup feta cheese, crumbled
Dressing Ingredients
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon garlic, minced
- Oregano, to taste
- Salt and pepper, to taste
Directions
- Combine lettuce, chicken, tomatoes, cucumber, black olives, and feta cheese in a large bowl. Set aside.
- In a small bowl, add olive oil, red wine vinegar, minced garlic, oregano, salt and pepper. Whisk until well combined.
- Drizzle dressing over salad and toss until evenly distributed. Serve immediately or let chill in the fridge for one hour. If prepping salads in advance, store dressing separately from salad until ready to eat. Enjoy!
