Ingredients:
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 1 cup prepared brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup whole kernel corn
  • 1 cup diced tomatoes
  • 1 cup shredded taco blend cheese
  • 1 avocado, sliced
  • 1/4 cup salsa
  • 1/4 cup plain Greek yogurt
Tupperware:
  • 4 meal prep containers
  • 8 small sauce containers, optional
Directions
  1. Prepare ground beef on the stove, cooking until browned. Drain excess fat.
  2. Add taco seasoning according to seasoning packet instructions. Set aside.
  3. Place meal prep containers on a clean surface.
  4. Layer preferred ingredients in the containers: brown rice, black beans, corn, tomatoes, lettuce, cheese, avocado, and seasoned ground beef.
  5. In small sauce containers, portion out salsa and Greek yogurt. Divide out the containers into each of the taco bowls.
  6. Place lids on each meal prepped container. Store in the fridge for up to four days.
  7. To serve, take out sauce containers and reheat taco bowl in the microwave for 1-2 minutes, then top with sauces. Enjoy!
