Ingredients:
- 1 pound lean ground beef
- 1 packet taco seasoning
- 1 cup prepared brown rice
- 1 cup black beans, drained and rinsed
- 1 cup whole kernel corn
- 1 cup diced tomatoes
- 1 cup shredded taco blend cheese
- 1 avocado, sliced
- 1/4 cup salsa
- 1/4 cup plain Greek yogurt
Tupperware:
- 4 meal prep containers
- 8 small sauce containers, optional
Directions
- Prepare ground beef on the stove, cooking until browned. Drain excess fat.
- Add taco seasoning according to seasoning packet instructions. Set aside.
- Place meal prep containers on a clean surface.
- Layer preferred ingredients in the containers: brown rice, black beans, corn, tomatoes, lettuce, cheese, avocado, and seasoned ground beef.
- In small sauce containers, portion out salsa and Greek yogurt. Divide out the containers into each of the taco bowls.
- Place lids on each meal prepped container. Store in the fridge for up to four days.
- To serve, take out sauce containers and reheat taco bowl in the microwave for 1-2 minutes, then top with sauces. Enjoy!
