Ingredients:
- 1 cup quinoa, uncooked
- 1 pound chicken breast
- 1/2 cup cherry tomatoes, halved
- 1/3 cup feta cheese, crumbled
- 1/2 avocado, sliced
- 1 cup corn
- 1 tablespoon oil
- Lime (optional)
Chicken Seasoning
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon ground paprika
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Directions
- Cook quinoa according to package instructions. Fluff the quinoa with a fork and cover to keep warm.
- In a bowl, combine seasonings for chicken and coat the chicken. Over medium heat, heat one tablespoon oil in a skillet. Cook chicken for five minutes on each side.
- Cut the tomatoes and slice the avocado. Slice the chicken breast into thin slices. Add quinoa to a bowl, top with chicken, corn, tomatoes, avocado, and feta cheese. Drizzle fresh lime over everything (optional).
