Ingredients:
- 1/2 cup vegetable oil
- 1 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 15 ounce can of pumpkin puree
- 2 cups flour
- 1/2 tablespoon cinnamon
- 1/2 tablespoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Directions
- Preheat oven to 325 degrees. In a large bowl add oil, sugar, brown sugar, and eggs, and whisk until well combined.
- Add pumpkin puree to the mixture and stir.
- In a small bowl combine flour, cinnamon, nutmeg, baking soda, baking powder, and salt. Mix together, then slowly stir the dry ingredients into the pumpkin mixture.
- Pour batter into two greased 8x4 loaf pans. Bake for 50-60 minutes or until a toothpick can be inserted into the pumpkin loaf and come out clean.
- Let rest for 10 minutes in a pan and then move to a wire rack to cool further before serving or storing.
