Vinaigrette
- 2 cups fresh or frozen raspberries
- 1/2 cup olive oil
- 1/4 cup red wine vinegar or balsamic vinegar
- 2 teaspoons Dijon mustard
- Salt and pepper, to taste
Salad
- 10 ounces Spring mix lettuce, rinsed and chopped
- 1/2 cup crumbled feta cheese
- 1 cup chopped walnuts
- 1 1/2 - 2 cups fresh strawberries, rinsed and chopped
- 1 red onion (optional)
- 1 grilled chicken breast, sliced (optional)
- 1-2 cloves garlic, peeled and minced (optional)
Vinaigrette Instructions
- Add all ingredients to a food processor and blend until smooth.
Salad Instructions
- Add all salad ingredients to a large bowl.
- Top with desired amount of vinaigrette.
- Toss the salad with tongs or add a lid and shake until well-combined
- Top with optional ingredients, if desired.
